Description
Walking Taco Casserole is a fun and comforting dinner made with seasoned ground beef, chili beans, Rotel tomatoes, crunchy crushed Doritos or corn chips, and plenty of melted cheddar cheese. Add sour cream, lettuce, tomatoes, and fresh herbs on top for all the classic taco-night flavors in an easy baked casserole.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 packet (1 oz) taco seasoning
- โ cup water
- 1 can (15 oz) chili beans, undrained
- 1 can (10 oz) Rotel, undrained
- 2 cups shredded cheddar cheese
- 2 cups crushed Doritos or corn chips (Fritos)
- 1 cup sour cream, for topping, optional
- 1 cup shredded lettuce, for garnish, optional
- 1 diced tomato, for garnish, optional
- Chopped green onions or cilantro, optional
Instructions
- Preheat the oven to 375ยฐF.
- Heat a large skillet over medium heat. Add the ground beef and diced onion.
- Cook for 6โ8 minutes, breaking the beef apart with a spoon, until the beef is browned and the onion is softened. Drain any excess grease if needed.
- Stir in the taco seasoning and โ cup water. Simmer for 2โ3 minutes, stirring occasionally.
- Add the undrained chili beans and Rotel. Stir well and simmer for another 4โ5 minutes, allowing the mixture to thicken slightly and the flavors to combine.
- Spread half of the crushed Doritos or corn chips evenly across the bottom of a greased 9×13-inch baking dish.
- Spoon the beef and bean mixture evenly over the chips.
- Sprinkle the shredded cheddar cheese over the beef mixture.
- Bake uncovered for 15โ20 minutes, until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it rest for about 5 minutes.
- Top with the remaining crushed Doritos or corn chips for extra crunch.
- Add optional toppings such as sour cream, shredded lettuce, diced tomato, chopped green onions, or fresh cilantro.
- Serve warm and enjoy.

- Use lean ground beef if you want a lighter casserole with less excess grease.
- Do not drain the chili beans or Rotel because their liquid helps create the flavorful filling.
- Add the chips just before serving if you prefer maximum crunch.
- Doritos add extra cheesy flavor, while Fritos provide a classic corn-chip crunch.
