Description

Ingredients

  • For the Cod
  • 4 cod fillets
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • For the Roasted Red Pepper Sauce
  • 2 roasted red peppers
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable or chicken broth
  • 1/2 cup heavy cream or coconut milk
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish


Instructions

  1. Season cod fillets with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium heat. Sear cod for 3โ€“4 minutes per side until lightly golden and cooked through. Remove and set aside.
  3. In the same skillet, heat olive oil and sautรฉ chopped onion for 3โ€“4 minutes until soft.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add roasted red peppers, broth, heavy cream, Italian herbs, smoked paprika, salt, and pepper.
  6. Blend sauce using an immersion blender or transfer carefully to a blender until smooth.
  7. Return sauce to skillet and simmer for 5 minutes.
  8. Add cod back into the pan and spoon sauce over the fillets.
  9. Garnish with fresh parsley or basil and serve warm.

Notes

  • Serve over rice, mashed potatoes, or pasta for a complete meal.
  • Coconut milk makes a great dairy-free alternative.
  • Freshly roasted peppers give the sauce even deeper flavor.
