Ingredients
- For the Cod
- 4 cod fillets
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- For the Roasted Red Pepper Sauce
- 2 roasted red peppers
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 cup vegetable or chicken broth
- 1/2 cup heavy cream or coconut milk
- 1 teaspoon Italian herbs
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley or basil for garnish
Instructions
- Season cod fillets with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium heat. Sear cod for 3โ4 minutes per side until lightly golden and cooked through. Remove and set aside.
- In the same skillet, heat olive oil and sautรฉ chopped onion for 3โ4 minutes until soft.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add roasted red peppers, broth, heavy cream, Italian herbs, smoked paprika, salt, and pepper.
- Blend sauce using an immersion blender or transfer carefully to a blender until smooth.
- Return sauce to skillet and simmer for 5 minutes.
- Add cod back into the pan and spoon sauce over the fillets.
- Garnish with fresh parsley or basil and serve warm.
Notes
- Serve over rice, mashed potatoes, or pasta for a complete meal.
- Coconut milk makes a great dairy-free alternative.
- Freshly roasted peppers give the sauce even deeper flavor.
