Ingredients

  • 4 large jalapeños, diced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • Grilled Cheese Dippers:
  • Bread slices
  • 1 cup shredded mozzarella cheese
  • Butter (for grilling)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and jalapeños until softened.
  3. Add garlic and cook for 1 minute.
  4. Pour in broth, smoked paprika, cumin, salt, and pepper. Bring to a simmer.
  5. Stir in cream cheese until fully melted and smooth.
  6. Add shredded cheddar cheese and mix until creamy.
  7. Simmer for 10–15 minutes, stirring occasionally.
  8. Meanwhile, prepare grilled cheese dippers: butter bread, add mozzarella, and grill until golden and melted.
