This Pistachio Tiramisu is a rich and creamy no-bake dessert layered with coffee-soaked ladyfingers, fluffy pistachio mascarpone filling, and topped with melted pistachio cream and crunchy pistachios. Ingredients
- 16 oz mascarpone cheese, cold
- 3 cups heavy whipping cream, cold
- 1 cup powdered sugar
- 1 cup sweetened pistachio cream
- 1 teaspoon vanilla extract
- 1 cup strong brewed espresso or coffee, cooled
- 2 tablespoons coffee liqueur or dark rum (optional)
- 2 packages ladyfinger biscuits (about 40)
- 1/4 cup pistachio cream, gently warmed
- 1/2 cup chopped pistachios
Instructions
- In a large mixing bowl, beat the cold mascarpone cheese, powdered sugar, pistachio cream, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream gently into the pistachio mascarpone mixture until fully combined and fluffy.
- In a shallow bowl, combine the cooled espresso with coffee liqueur or rum if using.
- Quickly dip each ladyfinger into the coffee mixture and arrange a layer in the bottom of a baking dish.
- Spread half of the pistachio mascarpone filling over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining filling.
- Drizzle the warmed pistachio cream over the top and sprinkle with chopped pistachios.
- Cover and refrigerate for at least 6 hours or overnight before serving.
Notes
- Do not soak the ladyfingers too long or they may become soggy.
- For the best flavor and texture, chill overnight before serving.
- You can use alcohol-free coffee syrup instead of liqueur if preferred.
