Description

These Peanut Butter Lunch Lady Bars are soft, chewy, and packed with rich peanut butter flavor. Made with oats, brown sugar, and topped with a creamy peanut butter frosting, theyโ€™re the ultimate nostalgic dessert perfect for bake sales, lunchboxes, and family gatherings.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats
  • 1/2 cup creamy peanut butter
  • 4 tablespoons unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3โ€“4 tablespoons milk, as needed
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Fold in the quick oats until evenly combined.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 20โ€“25 minutes or until the edges are golden and the center is set. Allow bars to cool completely.
  9. For the frosting, beat together peanut butter, softened butter, vanilla extract, powdered sugar, and enough milk to create a smooth spreadable consistency.
  10. Spread frosting over cooled bars, slice, and serve.
