Description
Parmesan Chicken Meatloaf is a flavorful and cheesy twist on classic meatloaf, combining ground chicken with Parmesan, mozzarella, and Italian herbs, topped with a crispy, cheesy marinara crust.
Ingredients
- 2 tablespoons olive oil
- 80 g onion, finely diced
- 2 garlic cloves, minced
- 900 g ground chicken
- 60 g seasoned breadcrumbs
- 2 teaspoons milk
- 30 g Parmesan cheese, grated
- 1 egg
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- 3 mozzarella cheese strings, cut into 1 cm slices
- 120 ml marinara sauce
- 2 tablespoons panko breadcrumbs
- 20 g Parmesan cheese, grated
- 1 tablespoon butter, melted
- 1 tablespoon fresh parsley, chopped
- 120 g mozzarella cheese, shredded
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onion and garlic until soft. Set aside.
- In a large bowl, combine ground chicken, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, salt, and sautéed onions and garlic.
- Shape mixture into a loaf and place in a greased baking dish. Insert mozzarella strings into the center.
- Mix marinara sauce, panko, Parmesan, butter, and parsley; spread over the meatloaf. Top with shredded mozzarella.
- Bake for 40–50 minutes until cooked through and golden on top. Let rest 5 minutes before slicing.
Notes
- Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
- Serve with a side of vegetables or salad for a complete meal.
- Leftovers store well in the fridge for 2–3 days.
