Ingredients
- 1 pound boneless skinless chicken breasts, cooked and shredded
- 1 tablespoon olive oil
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 small onion, chopped
- 2 garlic cloves, minced
- 6 cups chicken broth
- 2 cups milk
- 1 cup carrots, shredded
- 2 teaspoons parsley flakes
- Salt and pepper, to taste
- 1 package (16 ounces) mini potato gnocchi
- 1 cup fresh spinach, chopped
Instructions
- Heat the olive oil in a large soup pot or Dutch oven over medium heat.
- Add the chopped onion and cook for 3โ4 minutes, stirring occasionally, until softened.
- Add the minced garlic and cook for about 30 seconds, until fragrant.
- Add the butter and allow it to melt completely.
- Sprinkle the flour over the vegetables and butter. Stir continuously for 1โ2 minutes to create a smooth roux.
- Gradually pour in the chicken broth while whisking or stirring constantly to prevent lumps from forming.
- Add the milk, shredded carrots, parsley flakes, salt, and black pepper. Stir until well combined.
- Bring the soup to a gentle simmer and cook for about 5โ7 minutes, stirring occasionally, until slightly thickened.
- Add the cooked shredded chicken and mini potato gnocchi. Continue simmering for 3โ5 minutes, or until the gnocchi are tender and heated through.
- Stir in the chopped fresh spinach and cook for 1โ2 minutes, until the spinach has wilted.
- Taste and adjust the salt and pepper as needed. Serve the soup warm.
Notes
- Cook and shred the chicken ahead of time to make this recipe even faster.
- Stir the flour continuously with the butter to prevent lumps and create a smooth, creamy soup base.
- Do not boil the soup aggressively after adding the milk, as gentle simmering helps maintain a smooth texture.
- Add the spinach at the end so it stays fresh and bright.
- The soup will thicken as it cools. Add a splash of chicken broth or milk when reheating leftovers if needed.
