Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ยฝ cup grated Parmesan cheese

  • 1 tablespoon truffle oil

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the potato gnocchi and cook according to the package directions until the gnocchi float to the surface and are tender.
  3. Reserve about ยฝ cup of the cooking water, then drain the gnocchi.
  4. While the gnocchi cooks, melt the butter in a large skillet over medium heat.
  5. Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
  6. Pour the heavy cream into the skillet and bring it to a gentle simmer.
  7. Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth.
  8. Season the sauce with salt and black pepper to taste.
  9. Add the cooked gnocchi to the skillet and gently toss until every piece is coated in the creamy sauce.
  10. If the sauce becomes too thick, add a small amount of the reserved gnocchi cooking water until it reaches your desired consistency.
  11. Stir in the chopped fresh parsley.
  12. Remove the skillet from the heat and drizzle the truffle oil over the gnocchi.
  13. Toss gently once more and serve immediately with additional Parmesan and black pepper if desired.
