These Key Lime Pie Rice Krispie Treats are a bright, tangy twist on the classic no-bake dessert. Creamy marshmallows, crunchy cereal, graham cracker crumbs, and zesty key lime flavor come together for a sweet and refreshing treat.
Ingredients
- 5 cups Rice Krispies cereal
- 10 cups mini marshmallows
- 5 tablespoons unsalted butter
- 1/2 cup key lime juice (fresh or bottled)
- 2 tablespoons key lime zest
- 1 cup graham cracker crumbs
- 1 cup white chocolate chips
- 1/2 teaspoon coconut oil (for drizzle)
- Optional: 1/2 cup coconut flakes
- Optional: 1/4 cup crushed nuts
- Optional: a few drops green food coloring
Instructions
- Grease a large baking dish and set aside.
- In a large pot, melt butter over low heat.
- Add mini marshmallows and stir until fully melted and smooth.
- Mix in key lime juice, zest, and optional food coloring.
- Remove from heat and quickly fold in Rice Krispies cereal and graham cracker crumbs.
- Stir until evenly coated, then fold in white chocolate chips.
- Press mixture firmly into prepared dish using a greased spatula.
- In a small bowl, melt white chocolate chips with coconut oil and drizzle over the top.
- Sprinkle coconut flakes or nuts if desired.
- Let set for at least 1 hour before cutting into squares.
Notes
- Work quickly once marshmallows are melted to keep texture soft and gooey.
- For stronger lime flavor, add extra zest.
