Ingredients

  • Salt, pepper, and garlic powder to taste
  • Toppings:
  • ยผโ€“ยฝ cup crumbled cotija or feta cheese
  • Fresh cilantro or parsley
  • Lime wedges


Instructions

  1. Marinate chicken with olive oil, lime juice, chili powder, paprika, garlic, salt, and pepper. Let sit for 15โ€“20 minutes.
  2. Grill or pan-cook chicken over medium heat until fully cooked. Slice into strips.
  3. Cook corn in a skillet with olive oil, cumin, cayenne, salt, and pepper until slightly charred. Finish with lime juice and cilantro.
  4. In a large bowl, add lettuce, tomatoes, red onion, and bell pepper.
  5. Whisk together Greek yogurt, lime juice, olive oil, honey, salt, pepper, and garlic powder to make dressing.
