Ingredients
- Meat and Vegetables:
- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- Cheese:
- 1 cup shredded mozzarella cheese
- Seasonings and Oils:
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat and sauté onion and garlic until soft and fragrant.
- Add ground turkey and cook until browned and fully cooked through, breaking it apart as it cooks.
- Stir in diced tomatoes, Italian herbs, salt, and black pepper. Cook for 2–3 minutes.
- In the baking dish, layer sliced zucchini evenly on the bottom.
- Spread the cooked turkey mixture over the zucchini layer.
- Sprinkle shredded mozzarella cheese evenly on top.
- Bake for 20–25 minutes, or until cheese is melted and bubbly and zucchini is tender.
- Let cool for a few minutes before serving.
