Ingredients

  • Meat and Vegetables:
  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • Cheese:
  • 1 cup shredded mozzarella cheese
  • Seasonings and Oils:
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat and sauté onion and garlic until soft and fragrant.
  3. Add ground turkey and cook until browned and fully cooked through, breaking it apart as it cooks.
  4. Stir in diced tomatoes, Italian herbs, salt, and black pepper. Cook for 2–3 minutes.
  5. In the baking dish, layer sliced zucchini evenly on the bottom.
  6. Spread the cooked turkey mixture over the zucchini layer.
  7. Sprinkle shredded mozzarella cheese evenly on top.
  8. Bake for 20–25 minutes, or until cheese is melted and bubbly and zucchini is tender.
  9. Let cool for a few minutes before serving.

  • For less moisture, lightly salt zucchini and let it sit for 10 minutes before assembling.
