Description
This Ginger Garlic Chicken Noodle Soup is warm, soothing, and packed with flavor. Tender chicken, aromatic ginger and garlic, fresh vegetables, and noodles come together in a comforting broth thatโs perfect for any day you need a cozy meal.
Ingredients
- 2 tbsp vegetable oil
- 1 lb boneless skinless chicken thighs or breasts, bite-sized
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbsp fresh ginger, minced
- 4 cups chicken broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cups egg noodles
- 1 cup bok choy or spinach
- 1 tsp soy sauce (optional)
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions
- Heat oil in a large pot over medium heat. Add chicken and cook until lightly browned on all sides.
- Add onion, garlic, and ginger. Sautรฉ for 2โ3 minutes until fragrant.
- Pour in chicken broth and water, then add carrots and celery. Bring to a boil.
- Reduce heat and simmer for 10โ12 minutes until vegetables are tender and chicken is cooked through.
- Add noodles and cook according to package instructions until tender.
- Stir in bok choy or spinach and soy sauce, cooking for 1โ2 minutes until wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro or green onions.

- Add chili flakes for a spicy version.
- Use rice noodles for a gluten-free option.
- Fresh ginger gives the best flavorโavoid powdered if possible.
