Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each), pounded to 1/2-inch thickness
- 1/2 cup dill pickle juice
- 1/2 cup all-purpose flour
- 1 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, lightly beaten
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp olive oil (for frying)
Instructions
- Place chicken breasts in a bowl and marinate with dill pickle juice for at least 30 minutes (or up to 4 hours for stronger flavor).
- Set up breading station: one bowl with flour, one with beaten eggs, and one with Panko mixed with Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- Remove chicken from marinade and pat dry slightly.
- Dredge each piece in flour, then egg, then coat thoroughly in the Parmesan-Panko mixture.
- Heat olive oil in a large skillet over medium heat.
