These Chipotle Honey Salmon Tacos with Pineapple Salsa are sweet, smoky, and spicy all in one bite. Tender salmon glazed with chipotle honey is paired with fresh pineapple salsa for a vibrant and refreshing taco night favorite.


Ingredients

  • For the salmon:
  • 1 1/2 pounds salmon fillets (skin removed)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 chipotle pepper, finely minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the pineapple salsa:
  • 1 1/2 cups fresh pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of salt
  • For serving:
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage or lettuce (optional)
  • Lime wedges
  • Extra cilantro for garnish


Instructions

  1. Preheat oven or grill to medium-high heat.
  2. Mix olive oil, honey, adobo sauce, minced chipotle, garlic powder, smoked paprika, salt, and pepper.
  3. Coat salmon evenly with the chipotle honey mixture.
  4. Cook salmon for 12–15 minutes until flaky and caramelized.
  5. Meanwhile, combine pineapple, red onion, jalapeño, cilantro, lime juice, and salt to make salsa.
  6. Warm tortillas in a dry skillet or oven.
  7. Break salmon into chunks and assemble tacos with cabbage, pineapple salsa, and extra cilantro.
  8. Serve with lime wedges.

Notes

  • Adjust chipotle amount for more or less heat.
  • Grilling the salmon adds extra smoky flavor.
