Ingredients
- 1 pound ground beef

- 1 (14-ounce) can diced tomatoes
- 1/3 cup uncooked white long-grain rice
- 1 bay leaf

- 2 tablespoons chopped parsley
Instructions
- Heat a large soup pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked. Drain excess grease if necessary.
- Add the diced onion and cook for 3โ4 minutes, until softened.
- Add the minced garlic, rosemary, thyme, and Italian seasoning. Cook for about 30 seconds, stirring until fragrant.
- Stir in the tomato paste and Worcestershire sauce. Cook for 1โ2 minutes to deepen the flavor.
- Add the chopped cabbage, diced carrots, and red bell pepper. Stir well and cook for about 3โ4 minutes.
- Pour in the beef broth, tomato sauce, and diced tomatoes. Stir to combine.
- Add the uncooked rice, bay leaf, and brown sugar. Stir well.
- Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for about 25โ30 minutes, stirring occasionally, until the rice and vegetables are tender.
- Remove the bay leaf and taste the soup. Adjust the seasoning as needed.
- Stir in the chopped parsley just before serving.
- Ladle into bowls and serve hot.
