Description
This Broccoli Cheddar Soup is rich, creamy, and packed with tender broccoli, carrots, and plenty of sharp cheddar cheese. It is an easy homemade comfort food that comes together on the stovetop for a warm and satisfying meal.
Ingredients
- 2 tablespoons butter
- 2 tablespoons finely chopped onions
- 1/4 cup all-purpose flour
- 1 cup half and half cream
- 1 cup milk
- 3 cups chicken stock
- 1 lb fresh broccoli, cut into small florets
- 2 cups carrots, chopped into small pieces
- 16 oz (2 cups) grated sharp cheddar cheese
- 1/4 teaspoon dry mustard
- Salt and pepper, to taste
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat.
- Add the finely chopped onions and cook for 2-3 minutes, until softened.
- Sprinkle the flour over the onions and whisk continuously for 1-2 minutes to cook the flour.
- Gradually whisk in the half and half and milk until smooth and well combined.
- Slowly pour in the chicken stock while whisking to prevent lumps from forming.
- Add the chopped broccoli and carrots. Stir in the dry mustard and season with salt and pepper.
- Bring the soup to a gentle simmer and cook for 12-15 minutes, stirring occasionally, until the vegetables are tender.
- Reduce the heat to low. Gradually add the grated sharp cheddar cheese, stirring continuously until completely melted and the soup is smooth and creamy.
- Taste and adjust the salt and pepper as needed.
- Serve hot with additional shredded cheddar cheese on top if desired.
Notes
- Shred the cheddar cheese yourself for the smoothest texture and best melting.
- Keep the heat low when adding the cheese to help prevent the soup from becoming grainy.
- Cut the broccoli and carrots into small, evenly sized pieces so they cook at the same rate.
- Add a splash of milk or chicken stock if the soup becomes thicker than desired.
- For a vegetarian version, use vegetable stock instead of chicken stock.
