Description

Boursin Orzo Bake with Chicken and Veggies is a creamy, flavorful, and easy weeknight dinner. In just three simple steps, you get tender chicken, perfectly cooked orzo, and deliciously seasoned veggies, all coated in rich Boursin garlic & herb cheese.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until lightly browned. Add garlic and sautรฉ for 1 minute.
  2. Add orzo and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer for 10-12 minutes, until orzo is tender and liquid is mostly absorbed. Stir in Boursin cheese until creamy.
  3. Add cherry tomatoes, zucchini, and spinach. Cook for 2-3 minutes until veggies are slightly softened. Sprinkle with Parmesan if desired, garnish with fresh basil or parsley, and serve warm.
