Description

This BBQ Chicken Sweet Potato Skillet is a simple, hearty one-pan dinner made with tender sweet potatoes, juicy BBQ chicken, and melted cheese. It’s smoky, slightly sweet, and perfect for a quick weeknight meal.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 cups cooked chicken, shredded or chopped
  • 1 cup BBQ sauce
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, chopped
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional: chopped green onions or cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10–12 minutes, stirring occasionally, until they start to soften.
  3. Add onion and bell pepper, then cook for another 5 minutes until tender.
  4. Season with garlic powder, smoked paprika, salt, and pepper.
  5. Stir in cooked chicken and BBQ sauce, mixing well until everything is coated.
  6. Cook for 3–5 more minutes until heated through and slightly thickened.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Cover the skillet for 2–3 minutes until cheese is melted.
  9. Garnish with green onions or cilantro and serve warm.
