Ingredients
- 2 large sweet potatoes, peeled and diced
- 2 cups cooked chicken, shredded or chopped
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, chopped
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Optional: chopped green onions or cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for 10–12 minutes, stirring occasionally, until they start to soften.
- Add onion and bell pepper, then cook for another 5 minutes until tender.
- Season with garlic powder, smoked paprika, salt, and pepper.
- Stir in cooked chicken and BBQ sauce, mixing well until everything is coated.
- Cook for 3–5 more minutes until heated through and slightly thickened.
- Sprinkle shredded cheddar cheese over the top.
- Cover the skillet for 2–3 minutes until cheese is melted.
- Garnish with green onions or cilantro and serve warm.
