Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • 1 cup full-fat coconut milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • ยฝ teaspoon paprika
  • ยฝ teaspoon onion powder
  • ยผ cup chopped fresh parsley (plus extra for garnish)
  • Lemon slices (optional, for topping)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and lightly grease a baking dish with olive oil.
  2. Season cod fillets with salt and black pepper, then place them in the baking dish.
  3. In a bowl, whisk together coconut milk, lemon juice, lemon zest, garlic, Dijon mustard, paprika, and onion powder.
  4. Pour the sauce evenly over the cod fillets.
