Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. In a large skillet, cook ground beef with onion and garlic until beef is browned. Season with salt and pepper.
  3. Layer the cooked beef in a greased baking dish, then add carrots, potatoes, corn, and green beans.
  4. Mix cream of mushroom soup with thyme and parsley, then pour over the layered ingredients.
  5. Top with shredded cheddar cheese.
  6. Cover with foil and bake for 25โ€“30 minutes until vegetables are tender and casserole is heated through.
