Ingredients
- 1 bag frozen tater tots
- 4 large eggs
- 4 slices bacon or turkey bacon, cooked and crumbled
- 1 cup shredded cheddar cheese (or your favorite melting cheese)
- 2 tablespoons milk (for scrambled eggs)
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 green onions, chopped
- Salt and pepper, to taste
- Optional: hot sauce, salsa, or sour cream
- 1 tablespoon butter or cooking oil for scrambling eggs
Instructions
- Preheat oven and cook tater tots according to package instructions until crispy.
- In a skillet, heat butter or oil over medium heat. Whisk eggs with milk, salt, and pepper, then scramble until just set. Remove from heat.
- Cook bacon until crispy and crumble into pieces.
- In a large bowl or individual bowls, layer tater tots, scrambled eggs, bacon, bell peppers, onions, cherry tomatoes, and green onions.
- Sprinkle shredded cheddar cheese over the top. Add avocado slices and any optional toppings like hot sauce, salsa, or sour cream.
- Serve immediately while warm and enjoy!

- You can swap tater tots with hash browns for a different texture.
