Ingredients

  • 1 bag frozen tater tots
  • 4 large eggs
  • 4 slices bacon or turkey bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese (or your favorite melting cheese)
  • 2 tablespoons milk (for scrambled eggs)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Salt and pepper, to taste
  • Optional: hot sauce, salsa, or sour cream
  • 1 tablespoon butter or cooking oil for scrambling eggs


Instructions

  1. Preheat oven and cook tater tots according to package instructions until crispy.
  2. In a skillet, heat butter or oil over medium heat. Whisk eggs with milk, salt, and pepper, then scramble until just set. Remove from heat.
  3. Cook bacon until crispy and crumble into pieces.
  4. In a large bowl or individual bowls, layer tater tots, scrambled eggs, bacon, bell peppers, onions, cherry tomatoes, and green onions.
