Description

Tropical Chill Coconut Lime Bars are creamy, zesty, and indulgent dessert bars with a graham cracker-coconut crust, luscious coconut-lime filling, and optional tropical garnishes. Perfect for summer or any occasion!


Ingredients

  • 1 ยฝ cups graham cracker crumbs
  • ยฝ cup unsweetened shredded coconut
  • ยฝ cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup coconut milk (canned)
  • Zest of 2 limes
  • Juice of 2 limes
  • ยฝ cup granulated sugar
  • ยฝ cup heavy whipping cream
  • Pinch of salt
  • Lime slices and toasted coconut for garnish (optional)


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line an 8×8-inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, shredded coconut, and melted butter in a bowl. Press evenly into the bottom of the prepared pan to form the crust.
  3. Bake crust for 8โ€“10 minutes until lightly golden. Remove from oven and let cool slightly.
  4. In a mixing bowl, whisk together sweetened condensed milk, coconut milk, lime zest, lime juice, sugar, heavy cream, and a pinch of salt until smooth and creamy.
  5. Pour the coconut-lime mixture over the baked crust. Smooth the top with a spatula.
  6. Bake for 20โ€“25 minutes until the filling is set but slightly jiggly in the center.
  7. Allow to cool completely, then refrigerate for at least 2 hours before slicing into bars.
  8. Optional: Garnish with lime slices and toasted coconut before serving.

Notes

  • For extra tropical flavor, add a teaspoon of rum extract to the filling.
  • Can be made a day ahead and stored in the refrigerator for up to 3 days.
  • Use full-fat coconut milk for creamier texture.
