Texas Tamale Pie is a hearty, flavorful casserole that combines seasoned ground beef, black beans, diced tomatoes with green chilies, and a creamy cornmeal topping. Perfect for a comforting weeknight dinner.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornmeal
- 1 cup milk
- 1 large egg
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a skillet, cook ground beef and chopped onion until beef is browned. Drain excess fat.
- Stir in black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer 5 minutes.
- In a separate bowl, whisk together cornmeal, milk, and egg.
- Pour beef mixture into a greased baking dish. Spread cornmeal mixture evenly over the top.
- Sprinkle shredded cheddar cheese over the cornmeal topping. Add black olives if using.
- Bake 25-30 minutes until the top is golden and set. Garnish with chopped cilantro before serving.
Notes
- For extra heat, add diced jalapeรฑos or hot chili powder.
- Leftovers reheat well for lunch or dinner the next day.
- Can substitute ground turkey for a lighter version.
