Description
Texas Roadhouse Smothered Chicken features tender chicken breasts smothered with sautรฉed mushrooms and onions, topped with a blend of mozzarella and cheddar cheese for a rich, comforting meal.
Ingredients
- 4 boneless skinless chicken breasts (6โ8 oz each)
- 2 tablespoons olive oil or butter
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sliced mushrooms
- 1 small onion, thinly sliced
- 1 cup shredded mozzarella cheese or Monterey Jack
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil or butter in a skillet over medium-high heat and sear chicken 2โ3 minutes per side until golden brown (chicken will finish cooking in oven).
- Remove chicken and sautรฉ mushrooms and onion in the same skillet until softened.
- Place chicken in a baking dish, top with sautรฉed mushrooms and onions, then sprinkle mozzarella and cheddar cheese over the top.
- Bake for 15โ20 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish with chopped parsley and serve warm.
Notes
- Optional: serve with mashed potatoes or rice for a complete meal.
- Leftovers can be refrigerated for 2โ3 days and reheated in the oven.
