Description

Ingredients

  • 4 boneless skinless chicken breasts (6โ€“8 oz each)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sliced mushrooms
  • 1 small onion, thinly sliced
  • 1 cup shredded mozzarella cheese or Monterey Jack
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil or butter in a skillet over medium-high heat and sear chicken 2โ€“3 minutes per side until golden brown (chicken will finish cooking in oven).
  4. Remove chicken and sautรฉ mushrooms and onion in the same skillet until softened.
  5. Place chicken in a baking dish, top with sautรฉed mushrooms and onions, then sprinkle mozzarella and cheddar cheese over the top.
  6. Bake for 15โ€“20 minutes, until chicken is cooked through and cheese is melted and bubbly.
  7. Garnish with chopped parsley and serve warm.
