Sweet Hawaiian Crockpot Chicken is a tropical-inspired, tender, and juicy chicken dish simmered with pineapple, soy sauce, brown sugar, and a hint of ginger. Perfect for an easy weeknight dinner with a burst of flavor.


Ingredients

  • 4โ€“6 boneless, skinless chicken breasts
  • 1 (20 oz) can pineapple chunks, with juice
  • 1/2 cup soy sauce (or low-sodium)
  • 1/3 cup packed brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar or rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated or ground
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Chopped green onions or fresh parsley for garnish (optional)


Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix pineapple with juice, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger, and red pepper flakes. Pour over chicken.
  3. Cover and cook on LOW for 4โ€“6 hours or HIGH for 2โ€“3 hours, until chicken is cooked through.
  4. 30 minutes before serving, mix cornstarch and cold water to make a slurry, stir into the crockpot to thicken sauce.
  5. Garnish with chopped green onions or parsley and serve hot over rice or noodles.
