Sweet Hawaiian Crockpot Chicken is a tropical-inspired, tender, and juicy chicken dish simmered with pineapple, soy sauce, brown sugar, and a hint of ginger. Perfect for an easy weeknight dinner with a burst of flavor.
Ingredients
- 4โ6 boneless, skinless chicken breasts
- 1 (20 oz) can pineapple chunks, with juice
- 1/2 cup soy sauce (or low-sodium)
- 1/3 cup packed brown sugar
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar or rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated or ground
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Chopped green onions or fresh parsley for garnish (optional)
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix pineapple with juice, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger, and red pepper flakes. Pour over chicken.
- Cover and cook on LOW for 4โ6 hours or HIGH for 2โ3 hours, until chicken is cooked through.
- 30 minutes before serving, mix cornstarch and cold water to make a slurry, stir into the crockpot to thicken sauce.
- Garnish with chopped green onions or parsley and serve hot over rice or noodles.
