Description

Sweet Hawaiian Crock Pot Chicken is a tropical-inspired, easy slow-cooker meal. Tender chicken cooked with pineapple, soy sauce, garlic, and brown sugar creates a sweet and savory sauce, perfect served over rice and garnished with green onions and sesame seeds.


Ingredients

  • 2 lbs chicken breasts or thighs, boneless skinless
  • 1 can (8 oz) pineapple chunks
  • 3 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 1 red bell pepper, sliced
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tbsp cornstarch
  • 1 cup pineapple juice
  • Salt & pepper to taste
  • Cooked rice, for serving
  • Green onions & sesame seeds, for garnish


Instructions

  1. Place chicken in the crockpot. Add pineapple chunks, pineapple juice, soy sauce, brown sugar, garlic, ginger, and red bell pepper.
  2. Season with salt and pepper. Stir to combine.
  3. Cook on low for 4โ€“6 hours or on high for 2โ€“3 hours until chicken is tender.
  4. Remove chicken and shred if desired.
  5. Mix cornstarch with 1โ€“2 tbsp water and stir into the sauce to thicken. Cook 5 more minutes if needed.
  6. Serve chicken and sauce over cooked rice, garnished with green onions and sesame seeds.

Notes

  • Substitute chicken thighs for extra juiciness.
  • Use fresh pineapple if preferred.
  • Leftovers can be stored in the fridge for 2โ€“3 days.
