Description
Sweet Hawaiian Crock Pot Chicken is a tropical-inspired, easy slow-cooker meal. Tender chicken cooked with pineapple, soy sauce, garlic, and brown sugar creates a sweet and savory sauce, perfect served over rice and garnished with green onions and sesame seeds.
Ingredients
- 2 lbs chicken breasts or thighs, boneless skinless
- 1 can (8 oz) pineapple chunks
- 3 cloves garlic, minced
- 1/2 tsp ground ginger
- 1 red bell pepper, sliced
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1 tbsp cornstarch
- 1 cup pineapple juice
- Salt & pepper to taste
- Cooked rice, for serving
- Green onions & sesame seeds, for garnish
Instructions
- Place chicken in the crockpot. Add pineapple chunks, pineapple juice, soy sauce, brown sugar, garlic, ginger, and red bell pepper.
- Season with salt and pepper. Stir to combine.
- Cook on low for 4โ6 hours or on high for 2โ3 hours until chicken is tender.
- Remove chicken and shred if desired.
- Mix cornstarch with 1โ2 tbsp water and stir into the sauce to thicken. Cook 5 more minutes if needed.
- Serve chicken and sauce over cooked rice, garnished with green onions and sesame seeds.
Notes
- Substitute chicken thighs for extra juiciness.
- Use fresh pineapple if preferred.
- Leftovers can be stored in the fridge for 2โ3 days.
