Description

Ingredients

  • Banana Filling:
  • 6 ripe bananas, sliced (about 1/4 inch thick)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Cobbler Topping:
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk, cold
  • 6 tablespoons (3 ounces) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Optional Topping: Turbinado sugar, whipped cream, or vanilla ice cream


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine sliced bananas, granulated sugar, brown sugar, melted butter, water, lemon juice, vanilla, cinnamon, nutmeg, and a pinch of salt. Mix gently until bananas are coated.
  3. Pour banana mixture into the prepared baking dish.
  4. In another bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt for the topping.
  5. Stir in cold buttermilk, melted butter, and vanilla extract until just combined. The batter will be slightly lumpy.
  6. Drop spoonfuls of the cobbler topping over the banana filling, covering as much as possible. Sprinkle turbinado sugar on top if desired.
  7. Bake for 35โ€“40 minutes, until the topping is golden and set and bananas are bubbly.
  8. Serve warm with whipped cream or vanilla ice cream.
