Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup fresh cranberries (or frozen)
  • ยฝ cup orange juice (freshly squeezed preferred)
  • 2 tbsp honey (adjust to taste)
  • 1 tsp orange zest
  • ยฝ tsp dried thyme
  • ยฝ tsp cinnamon
  • ยฝ cup chicken broth
  • Fresh rosemary or thyme sprigs for garnish


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook 5โ€“6 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. Add garlic to the skillet and sautรฉ for 30 seconds until fragrant.
  4. Stir in cranberries, orange juice, honey, orange zest, thyme, cinnamon, and chicken broth. Simmer 5โ€“7 minutes until sauce thickens slightly.
  5. Return chicken to skillet, spoon sauce over top, and cook 2โ€“3 more minutes until heated through.
  6. Garnish with fresh rosemary or thyme sprigs and serve immediately.
