Description
This Shrimp Scampi Pasta Bake combines succulent shrimp with garlic, lemon, and Parmesan for a quick, easy, and delightfully flavorful pasta dinner. Perfect for weeknight meals or entertaining guests.
Ingredients
- 12 oz linguine or spaghetti
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup dry white wine (or chicken broth)
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- 1/2 cup shredded mozzarella cheese (optional, for topping)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add garlic and red pepper flakes; sautรฉ until fragrant, about 1 minute.
- Add shrimp and cook until pink and opaque, about 3โ4 minutes. Remove shrimp from skillet and set aside.
- Deglaze the skillet with white wine (or chicken broth), scraping up any browned bits. Stir in lemon juice and zest.
- Toss cooked pasta with shrimp, sauce, Parmesan cheese, and parsley.
- Transfer mixture to a greased baking dish. Sprinkle mozzarella cheese on top, if using.
- Bake for 10โ12 minutes, until cheese is melted and bubbly. Serve warm.
Notes
- For extra flavor, add a pinch of crushed red pepper flakes to the top before baking.
- Use fresh parsley and lemon zest for the brightest taste.
- Leftovers can be stored in the refrigerator for up to 2 days.
