Description

Santa Fe Chicken Skillet is a vibrant, one-pan meal featuring tender chicken breasts cooked with black beans, corn, diced tomatoes, and Mexican spices, topped with melted cheese for a flavorful dinner.


Ingredients

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt & pepper, to taste
  • 2 tablespoons olive oil
  • 1/2 medium onion, chopped
  • 1 (10 ounce) can Ro-tel diced tomatoes & green chilies, drained
  • 1 (14 ounce) can black beans, drained & rinsed
  • 1 (12 ounce) can corn, drained
  • 1/2 teaspoon smoked paprika
  • 1 cup Mexican cheese blend
  • Fresh cilantro, chopped (optional)


Instructions

  1. Season chicken breasts with garlic powder, chili powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, sautรฉ onion until translucent.
  4. Add drained tomatoes, black beans, corn, and smoked paprika. Cook 3โ€“5 minutes until heated through.
  5. Return chicken to skillet, sprinkle with Mexican cheese blend, and cover until cheese melts.
  6. Garnish with chopped cilantro, if desired. Serve hot.

  • Serve with rice, tortillas, or over salad for a complete meal.
  • Adjust spice levels by using mild or hot Ro-tel tomatoes.
