Description
Red Velvet Halloween Eyeball Cupcakes are perfect for spooky parties. Moist red velvet cupcakes are topped with creamy cream cheese frosting and decorated with eyeball candies for a fun Halloween effect.
Ingredients
- For the Cupcakes:
1 cup unsalted butter, softened, 2 cups sugar, 4 eggs, 2 tsp vanilla, ยฝ cup milk, 1 cup sour cream, 2 ยฝ cups flour, 1 tsp baking soda, 1 tsp baking powder, ยฝ tsp salt, ยฝ cup cocoa powder, 1 Tbsp or one whole bottle red food coloring - For the Frosting:
1 cup unsalted butter, softened, 8 oz cream cheese, softened, 1 tsp vanilla, 1 tsp salt, 4 cups powdered sugar, additional red food coloring - Eyeball candies for decoration
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and line cupcake tins with liners.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla, milk, and sour cream.
- In another bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients until just combined.
- Add red food coloring and mix until uniform.
- Fill cupcake liners about 2/3 full and bake 20โ25 minutes, or until a toothpick comes out clean. Cool completely.
- Prepare frosting by beating butter and cream cheese until smooth, then add vanilla, salt, and powdered sugar. Mix in red food coloring if desired.
- Frost cooled cupcakes and top with eyeball candies.
Notes
- Adjust the red food coloring to achieve a vibrant red color.
- Store cupcakes in an airtight container in the refrigerator for up to 3 days.
