Description

Red Velvet Halloween Eyeball Cupcakes are perfect for spooky parties. Moist red velvet cupcakes are topped with creamy cream cheese frosting and decorated with eyeball candies for a fun Halloween effect.


Ingredients

  • For the Cupcakes:
    1 cup unsalted butter, softened, 2 cups sugar, 4 eggs, 2 tsp vanilla, ยฝ cup milk, 1 cup sour cream, 2 ยฝ cups flour, 1 tsp baking soda, 1 tsp baking powder, ยฝ tsp salt, ยฝ cup cocoa powder, 1 Tbsp or one whole bottle red food coloring
  • For the Frosting:
    1 cup unsalted butter, softened, 8 oz cream cheese, softened, 1 tsp vanilla, 1 tsp salt, 4 cups powdered sugar, additional red food coloring
  • Eyeball candies for decoration


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line cupcake tins with liners.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla, milk, and sour cream.
  4. In another bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Add red food coloring and mix until uniform.
  7. Fill cupcake liners about 2/3 full and bake 20โ€“25 minutes, or until a toothpick comes out clean. Cool completely.
  8. Prepare frosting by beating butter and cream cheese until smooth, then add vanilla, salt, and powdered sugar. Mix in red food coloring if desired.
  9. Frost cooled cupcakes and top with eyeball candies.
