Ingredients
- 3 oz white queso
- 2 tsp olive oil
- 2 tbsp milk
- 1.5 lbs chicken breast
- 1 tsp adobo seasoning
- 10 oz saffron yellow rice
- 1 cube tomato bouillon
- 2 1/2 cups water
- Cooking spray
Instructions
- Preheat a large skillet over medium heat and lightly coat with cooking spray.
- Season chicken breast with adobo seasoning and sear in olive oil until fully cooked. Remove and set aside.
- Prepare saffron rice: dissolve tomato bouillon cube in water, add saffron rice, and cook according to package instructions.
- In a small saucepan, combine queso and milk, heat gently while stirring until smooth and creamy.
