Pistachio Pudding Cookies are soft, chewy, and full of nutty flavor. Made with instant pistachio pudding mix, almond extract, and a hint of green for a festive look, these cookies are perfect for any occasion.
Ingredients
- 1 cup unsalted butter (2 sticks), softened
- 1/2 cup powdered sugar
- 3.4 oz box instant pistachio pudding mix
- 1 2/3 cups all-purpose flour
- 1 1/2 tsp almond extract
- 1 tsp vanilla extract
- 4-5 drops green food coloring
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together softened butter and powdered sugar until light and fluffy.
- Mix in pistachio pudding mix, almond extract, vanilla extract, and green food coloring until combined.
- Gradually add flour and mix until a soft dough forms.
- Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
- Bake for 10–12 minutes until edges are lightly golden. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
- Optional: sprinkle with chopped pistachios on top before baking.
