Description

Pistachio Pudding Cookies are soft, chewy, and full of nutty flavor. Made with instant pistachio pudding mix, almond extract, and a hint of green for a festive look, these cookies are perfect for any occasion.


Ingredients

  • 1 cup unsalted butter (2 sticks), softened
  • 1/2 cup powdered sugar
  • 3.4 oz box instant pistachio pudding mix
  • 1 2/3 cups all-purpose flour
  • 1 1/2 tsp almond extract
  • 1 tsp vanilla extract
  • 4-5 drops green food coloring


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in pistachio pudding mix, almond extract, vanilla extract, and green food coloring until combined.
  4. Gradually add flour and mix until a soft dough forms.
  5. Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
  6. Bake for 10–12 minutes until edges are lightly golden. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
