Ingredients
- 1 lb chicken breast

- ½ cup soy sauce
- 1 ½ cups cooked rice
- 1 tsp cornstarch
- 2 tbsp honey or brown sugar
- 1 red pepper, sliced
- 1 tsp sesame seeds
- 2 tbsp olive or sesame oil
- 1 tbsp rice vinegar or apple cider vinegar
- ⅓ cup pineapple juice
- 1 tbsp water
Instructions
- Heat olive or sesame oil in a large skillet over medium-high heat.
- Add chicken and cook until lightly browned and cooked through.
- Stir in garlic, red bell pepper, and green onions; cook 2-3 minutes.
- Mix soy sauce, pineapple juice, honey, rice vinegar, and cornstarch in a small bowl; pour over chicken mixture.
- Add pineapple and cooked rice; stir to coat evenly.
- Cook 2-3 minutes until sauce thickens and everything is heated through.
- Sprinkle sesame seeds on top and serve warm.
