  • ½ cup soy sauce
  • 1 ½ cups cooked rice
  • 1 tsp cornstarch
  • 2 tbsp honey or brown sugar
  • 1 red pepper, sliced
  • 1 tsp sesame seeds
  • 2 tbsp olive or sesame oil
  • 1 tbsp rice vinegar or apple cider vinegar
  • ⅓ cup pineapple juice
  • 1 tbsp water


Instructions

  1. Heat olive or sesame oil in a large skillet over medium-high heat.
  2. Add chicken and cook until lightly browned and cooked through.
  3. Stir in garlic, red bell pepper, and green onions; cook 2-3 minutes.
  4. Mix soy sauce, pineapple juice, honey, rice vinegar, and cornstarch in a small bowl; pour over chicken mixture.
  5. Add pineapple and cooked rice; stir to coat evenly.
  6. Cook 2-3 minutes until sauce thickens and everything is heated through.
  7. Sprinkle sesame seeds on top and serve warm.
