Ingredients

  • 2 large boneless, skinless chicken breasts

  • 4 pieces of flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until fully cooked, about 5โ€“7 minutes per side. Let rest and slice thinly.
  3. Place flatbreads on a baking sheet. Spread a layer of pesto over each flatbread.
  4. Top with sliced chicken, shredded mozzarella, cherry tomatoes, and grated Parmesan.
  5. Bake for 8โ€“10 minutes until cheese is melted and flatbread edges are crisp.
