Ingredients

  • 1 lb orzo pasta
  • 1.5 lbs shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • 1/2 cup dry white wine (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese, plus extra for serving
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Sautรฉ onion until softened, about 3โ€“4 minutes.
  2. Add garlic and red pepper flakes (if using), cooking until fragrant, about 1 minute.
  3. Add orzo to the skillet and toast lightly for 1โ€“2 minutes.
  4. Pour in chicken broth and white wine (if using). Bring to a boil, then reduce heat to simmer and cook, stirring occasionally, until orzo is tender and most liquid is absorbed, about 10โ€“12 minutes.
  5. Add shrimp and cook until pink and opaque, about 3โ€“5 minutes.
  6. Stir in heavy cream, Parmesan cheese, lemon juice, and zest until creamy. Season with salt and pepper to taste.
  7. Remove from heat and sprinkle with fresh parsley. Serve immediately with extra Parmesan if desired.
