Ingredients
- 1 cup cottage cheese (low-fat or full-fat)
- 2 tbsp honey, maple syrup, or sweetener of choice
- 1 tsp pure vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1 scoop protein powder (optional, chocolate or vanilla)
- 2 tbsp chopped nuts or seeds
- Handful of mini chocolate chips (optional)
Instructions
- In a mixing bowl, combine cottage cheese, honey, and vanilla extract until smooth.
- Add cocoa powder, protein powder, and mix until fully incorporated.
- Stir in chopped nuts or seeds and mini chocolate chips if using.
- Using a spoon or cookie scoop, form mixture into small bite-sized balls.
- Place bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 5 days.
