Description

No Bake Chocolate Oatmeal Bars are a quick, easy, and delicious treat combining oats, chocolate, and peanut butter. Perfect for a snack or dessert without turning on the oven.


Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter


Instructions

  1. In a medium saucepan, melt butter over medium heat. Stir in brown sugar and vanilla extract until smooth.
  2. Remove from heat and stir in rolled oats until evenly coated.
  3. Press half of the oat mixture into a greased 8×8-inch baking pan to form the bottom layer.
  4. In a microwave-safe bowl, melt chocolate chips with peanut butter, stirring until smooth.
  5. Spread the chocolate-peanut butter mixture evenly over the oat layer.
  6. Top with remaining oat mixture and press gently.
  7. Refrigerate for at least 2 hours or until firm. Cut into bars and serve.

Notes

  • Optional: Sprinkle a pinch of sea salt on top for a sweet-salty flavor.
  • Store in an airtight container in the fridge for up to one week.
  • Can substitute almond or cashew butter for peanut butter.
