No Bake Chocolate Oatmeal Bars are a quick, easy, and delicious treat combining oats, chocolate, and peanut butter. Perfect for a snack or dessert without turning on the oven.
Ingredients
- 1 cup butter
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 cup semisweet or dark chocolate chips
- 1/2 cup peanut butter
Instructions
- In a medium saucepan, melt butter over medium heat. Stir in brown sugar and vanilla extract until smooth.
- Remove from heat and stir in rolled oats until evenly coated.
- Press half of the oat mixture into a greased 8×8-inch baking pan to form the bottom layer.
- In a microwave-safe bowl, melt chocolate chips with peanut butter, stirring until smooth.
- Spread the chocolate-peanut butter mixture evenly over the oat layer.
- Top with remaining oat mixture and press gently.
- Refrigerate for at least 2 hours or until firm. Cut into bars and serve.
Notes
- Optional: Sprinkle a pinch of sea salt on top for a sweet-salty flavor.
- Store in an airtight container in the fridge for up to one week.
- Can substitute almond or cashew butter for peanut butter.
