Description

Mexican Sopa de Fideo is a traditional, comforting soup made with thin pasta noodles in a flavorful tomato and broth base. Easy, authentic, and perfect for weeknight dinners.


Ingredients

  • 1 (28-ounce) can whole tomatoes
  • 1/4 cup + 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh Mexican oregano, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 (7-ounce) package cut fideo pasta
  • 1 quart chicken broth or vegetable broth
  • 1/3 cup chopped cilantro


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Add fideo pasta and toast lightly until golden, about 2–3 minutes.
  3. Transfer toasted pasta to a blender with tomatoes, oregano, salt, and cumin. Blend until smooth.
  4. Pour tomato mixture into a pot with chicken or vegetable broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes.
  5. Stir in chopped cilantro and adjust seasoning to taste.
  6. Serve warm, garnished with extra cilantro if desired.

Notes

  • For a vegetarian version, use vegetable broth.
  • Add a squeeze of lime for extra brightness.
  • Top with grated cheese or avocado slices if desired.
