Description
Mexican Sopa de Fideo is a traditional, comforting soup made with thin pasta noodles in a flavorful tomato and broth base. Easy, authentic, and perfect for weeknight dinners.
Ingredients
- 1 (28-ounce) can whole tomatoes
- 1/4 cup + 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh Mexican oregano, chopped
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 (7-ounce) package cut fideo pasta
- 1 quart chicken broth or vegetable broth
- 1/3 cup chopped cilantro
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add fideo pasta and toast lightly until golden, about 2–3 minutes.
- Transfer toasted pasta to a blender with tomatoes, oregano, salt, and cumin. Blend until smooth.
- Pour tomato mixture into a pot with chicken or vegetable broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes.
- Stir in chopped cilantro and adjust seasoning to taste.
- Serve warm, garnished with extra cilantro if desired.
Notes
- For a vegetarian version, use vegetable broth.
- Add a squeeze of lime for extra brightness.
- Top with grated cheese or avocado slices if desired.
