Ingredients
- 1 teaspoon olive oil
- 1-1 ยฝ pounds boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
- 2 teaspoons Italian seasoning, divided
- Salt and pepper to taste
- ยฝ cup diced carrots
- ยฝ cup diced celery
- ยฝ cup diced onions
- ยผ cup diced sundried tomatoes
- 3 garlic cloves, minced
- ยผ cup flour
- 2 tablespoons tomato paste (optional)
- 6-8 cups chicken broth
- 6 oz pasta, small shells
- 1 cup heavy whipping cream
- ยฝโ1 cup grated Parmesan Reggiano cheese
- 2 ยฝโ3 cups fresh spinach
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken pieces, 1 teaspoon Italian seasoning, salt, and pepper. Cook until lightly browned.
- Add carrots, celery, onions, sundried tomatoes, and garlic. Sautรฉ 4โ5 minutes until vegetables are softened.
- Sprinkle flour over the mixture and stir to coat. Add tomato paste if using.
- Gradually add chicken broth, stirring constantly to avoid lumps. Bring to a boil.
- Add pasta and remaining 1 teaspoon Italian seasoning. Reduce heat and simmer until pasta is tender, about 8โ10 minutes.
- Stir in heavy cream, Parmesan cheese, and fresh spinach. Cook 2โ3 minutes until spinach is wilted and soup is creamy.
- Adjust seasoning with salt and pepper. Serve hot and enjoy.
Notes
- Start with 6 cups of broth and add more if needed for desired consistency.
