  • ยผ cup diced sundried tomatoes

  • 2 tablespoons tomato paste (optional)
  • 6-8 cups chicken broth
  • 6 oz pasta, small shells
  • 1 cup heavy whipping cream
  • ยฝโ€“1 cup grated Parmesan Reggiano cheese
  • 2 ยฝโ€“3 cups fresh spinach


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces, 1 teaspoon Italian seasoning, salt, and pepper. Cook until lightly browned.
  2. Add carrots, celery, onions, sundried tomatoes, and garlic. Sautรฉ 4โ€“5 minutes until vegetables are softened.
  3. Sprinkle flour over the mixture and stir to coat. Add tomato paste if using.
  4. Gradually add chicken broth, stirring constantly to avoid lumps. Bring to a boil.
  5. Add pasta and remaining 1 teaspoon Italian seasoning. Reduce heat and simmer until pasta is tender, about 8โ€“10 minutes.
  6. Stir in heavy cream, Parmesan cheese, and fresh spinach. Cook 2โ€“3 minutes until spinach is wilted and soup is creamy.
  7. Adjust seasoning with salt and pepper. Serve hot and enjoy.
