Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ยฝ cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • ยฝ cup chicken broth
  • ยผ cup grated Parmesan cheese
  • ยฝ tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh basil (chopped, for garnish)
  • 1 tbsp fresh parsley (chopped, for garnish)
  • 1 package (about 15 oz) refrigerated or frozen ravioli (cheese or spinach)
  • Salt (for boiling water)


Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and oregano.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken breasts until golden brown on both sides and cooked through, about 5-6 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add sun-dried tomatoes and minced garlic. Sautรฉ for 1-2 minutes until fragrant.
  4. Add heavy cream, chicken broth, Parmesan cheese, and red pepper flakes. Stir and bring to a gentle simmer.
  5. Return chicken to the skillet and spoon sauce over the top. Simmer for 3-5 minutes to combine flavors.
  6. Meanwhile, cook ravioli according to package instructions in salted boiling water. Drain.
  7. Serve chicken and sauce over ravioli. Garnish with chopped basil and parsley.
