Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and pepper (to taste)
- 1 tsp garlic powder
- 1 tsp dried oregano
- ยฝ cup sun-dried tomatoes (packed in oil, drained and chopped)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- ยฝ cup chicken broth
- ยผ cup grated Parmesan cheese
- ยฝ tsp crushed red pepper flakes (optional)
- 1 tbsp fresh basil (chopped, for garnish)
- 1 tbsp fresh parsley (chopped, for garnish)
- 1 package (about 15 oz) refrigerated or frozen ravioli (cheese or spinach)
- Salt (for boiling water)
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and oregano.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken breasts until golden brown on both sides and cooked through, about 5-6 minutes per side. Remove chicken and set aside.
- In the same skillet, add sun-dried tomatoes and minced garlic. Sautรฉ for 1-2 minutes until fragrant.
- Add heavy cream, chicken broth, Parmesan cheese, and red pepper flakes. Stir and bring to a gentle simmer.
- Return chicken to the skillet and spoon sauce over the top. Simmer for 3-5 minutes to combine flavors.
- Meanwhile, cook ravioli according to package instructions in salted boiling water. Drain.
- Serve chicken and sauce over ravioli. Garnish with chopped basil and parsley.
