Description

Loaded Fiesta Potato Bowls are a crispy, cheesy, flavor-packed dinner made with seasoned roasted potatoes, taco-style protein, fresh toppings, and a creamy finish. Itโ€™s a fun and customizable meal perfect for family nights.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup salsa
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeรฑos, olives


Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
  3. Spread potatoes in a single layer and roast for 25โ€“30 minutes, flipping halfway, until crispy and golden.
  4. While potatoes roast, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  5. Add taco seasoning and a small amount of water according to packet instructions. Simmer for 3โ€“5 minutes. (If using black beans, heat with seasoning instead.)
  6. To assemble, divide roasted potatoes into bowls.
  7. Top with seasoned beef or beans, shredded cheese, sour cream (or yogurt), salsa, green onions, and cilantro.
  8. Add any optional toppings and serve warm.
