A hearty and cheesy baked rotini casserole with ground beef, sweet corn, and ranch seasoning, all smothered in a creamy cheddar sauce. Perfect for weeknight dinners!
Ingredients
- 1 lb ground beef
- 2 cups rotini pasta, cooked and drained
- 1 cup sweet corn kernels (fresh, frozen, or canned)
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup milk
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add garlic powder, onion powder, salt, pepper, and ranch seasoning. Stir to combine.
- In a separate bowl, mix cream cheese, sour cream, and milk until smooth. Stir in shredded cheddar cheese until melted and creamy.
- Combine cooked rotini, beef mixture, sweet corn, and cheese sauce in a large mixing bowl. Pour into a greased baking dish.
- Bake for 20โ25 minutes until heated through and bubbly. Garnish with fresh parsley before serving.
Notes
- Substitute rotini with penne or elbow macaroni if preferred.
- Add extra vegetables like bell peppers or broccoli for a healthier twist.
