Ingredients
- 1 pound boneless, skinless chicken breast, diced
- 1 cup orzo pasta
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon oregano
- Salt and pepper, to taste
- 1/4 cup chicken broth or low-sodium broth
- Optional: Fresh parsley for garnish
Instructions
- Cook orzo pasta according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through.
- Add garlic and sautรฉ for 1 minute until fragrant.
- Add mixed vegetables and cook for 3โ5 minutes until tender-crisp.
- Stir in cooked orzo, lemon zest, lemon juice, oregano, and chicken broth. Toss to combine and heat through.
- Garnish with fresh parsley, if desired, and serve immediately.

- Use any seasonal vegetables you like for variety.
