Ingredients
- 2 cups cooked shredded chicken (use leftover rotisserie chicken for extra flavor)
- 8 ounces cream cheese (substitute with Greek yogurt for a lighter option)
- 1/4 cup chopped chives (substitute with green onions if unavailable)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon pepper (adjust to taste)
- 1 package crescent roll dough
- 1 cup grated Parmesan cheese (freshly grated yields the best results)
- 1 cup heavy cream (can substitute with half-and-half)
- 1 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cooking spray or melted butter for brushing
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
- In a bowl, mix shredded chicken, cream cheese, chives, garlic powder, onion powder, salt, and pepper.
- Unroll crescent dough and cut into squares. Place a portion of the chicken mixture in the center of each square and fold into pillows, sealing edges well.
- Brush the pillows with melted butter or cooking spray and place on the prepared baking sheet.
- Bake for 18โ22 minutes until golden brown.
- Meanwhile, make the creamy Parmesan sauce: In a saucepan, melt butter over medium heat, whisk in flour, then slowly add chicken broth, heavy cream, Parmesan, and nutmeg. Cook until thickened and smooth.
- Serve baked chicken pillows warm, drizzled with the Parmesan sauce.
