Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 cup fresh cranberries
- 1/4 cup honey
- 1/4 cup orange juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces brie cheese, rind removed and cut into small pieces
- 1/4 cup chopped fresh parsley
- 1/2 cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Slice a pocket into each chicken breast and stuff with brie cheese.
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2โ3 minutes per side until golden.
- In a small saucepan, combine cranberries, honey, orange juice, cinnamon, ginger, salt, and pepper. Cook for 5 minutes until cranberries soften and glaze forms.
- Brush cranberry glaze over chicken and sprinkle with panko breadcrumbs and melted butter.
- Transfer skillet to oven and bake 15โ20 minutes until chicken is cooked through (internal temperature 165ยฐF / 74ยฐC).
- Garnish with chopped parsley and serve immediately.
Notes
- Use fresh cranberries for best flavor, frozen can work too.
- Substitute brie with camembert if desired.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
