This Honey Lime Chicken & Avocado Rice Stack is a vibrant, layered dish combining sweet and tangy chicken, zesty cilantro-lime rice, and creamy avocado. Perfect for a light, fresh lunch or dinner.
Ingredients
- For the Chicken:
1 lb boneless, skinless chicken breasts
1โ4 cup honey
2 tablespoons lime juice
1 teaspoon lime zest
2 cloves garlic, minced
Salt and pepper to taste - For the Rice:
1 cup cooked white or brown rice
1โ4 cup cilantro, chopped
1 tablespoon lime juice
Salt to taste - For the Avocado Layer:
2 ripe avocados, sliced
1 tablespoon lime juice
Salt and pepper to taste
Instructions
- In a bowl, whisk together honey, lime juice, lime zest, garlic, salt, and pepper. Marinate chicken breasts in the mixture for at least 20 minutes.
- Cook chicken in a skillet over medium heat until fully cooked, about 6โ7 minutes per side. Slice into strips.
- In a separate bowl, mix cooked rice with chopped cilantro, lime juice, and salt to taste.
- Slice avocados and toss with lime juice, salt, and pepper.
- Assemble the stack: layer rice at the bottom, top with sliced chicken, then avocado slices.
- Serve immediately, garnished with extra cilantro or lime wedges if desired.
