Description

Honey BBQ Chicken Rice is a savory and sweet one-pot meal featuring tender chicken, smoky BBQ flavors, and fluffy long-grain rice with mixed vegetables. Perfect for a quick and comforting family dinner.


Ingredients

  • 1 lb chicken thighs or breasts, boneless skinless
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup long-grain rice
  • 1 cup mixed vegetables, frozen or fresh
  • 1 green onion or parsley, chopped for garnish


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet or pot over medium heat. Add chicken and sear until lightly browned, about 3–4 minutes per side.
  3. Remove chicken and set aside. Add chicken broth, BBQ sauce, honey, and rice to the pot. Stir to combine.
  4. Return chicken to the pot and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender and chicken is cooked through.
  6. Stir in mixed vegetables and cook 3–5 more minutes until vegetables are heated.
  7. Garnish with chopped green onions or parsley and serve warm.

Notes

  • Use bone-in chicken for extra flavor but increase cooking time accordingly.
  • Adjust honey or BBQ sauce for desired sweetness.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated.
