Description
Honey BBQ Chicken Rice is a savory and sweet one-pot meal featuring tender chicken, smoky BBQ flavors, and fluffy long-grain rice with mixed vegetables. Perfect for a quick and comforting family dinner.
Ingredients
- 1 lb chicken thighs or breasts, boneless skinless
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup long-grain rice
- 1 cup mixed vegetables, frozen or fresh
- 1 green onion or parsley, chopped for garnish
Instructions
- Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet or pot over medium heat. Add chicken and sear until lightly browned, about 3–4 minutes per side.
- Remove chicken and set aside. Add chicken broth, BBQ sauce, honey, and rice to the pot. Stir to combine.
- Return chicken to the pot and bring to a boil.
- Reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender and chicken is cooked through.
- Stir in mixed vegetables and cook 3–5 more minutes until vegetables are heated.
- Garnish with chopped green onions or parsley and serve warm.
Notes
- Use bone-in chicken for extra flavor but increase cooking time accordingly.
- Adjust honey or BBQ sauce for desired sweetness.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated.
