Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ยฝ cup BBQ sauce (your choice)
  • ยผ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ยฝ tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Optional: chopped green onions or parsley, for garnish


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a large skillet or pan over medium heat. Add chicken and sear until golden brown on both sides.
  3. Stir in rice, chicken broth, BBQ sauce, honey, and mixed vegetables. Mix well.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
  5. Fluff rice, adjust seasoning if needed, and garnish with green onions or parsley before serving.

Notes

  • Use homemade or store-bought BBQ sauce depending on your flavor preference.
  • Chicken thighs stay juicier, but chicken breasts work well too.
