Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ยฝ cup BBQ sauce (your choice)
- ยผ cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- ยฝ tsp smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (frozen or fresh)
- Optional: chopped green onions or parsley, for garnish
Instructions
- Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a large skillet or pan over medium heat. Add chicken and sear until golden brown on both sides.
- Stir in rice, chicken broth, BBQ sauce, honey, and mixed vegetables. Mix well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
- Fluff rice, adjust seasoning if needed, and garnish with green onions or parsley before serving.
Notes
- Use homemade or store-bought BBQ sauce depending on your flavor preference.
- Chicken thighs stay juicier, but chicken breasts work well too.
