Description

Honey BBQ Chicken Rice is a sweet and savory one-pan meal made with tender chicken, fluffy rice, and a sticky honey BBQ sauce. This easy dinner is perfect for busy weeknights and is sure to be a family favorite.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ยฝ cup BBQ sauce
  • ยผ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (fresh or frozen)
  • Chopped green onions or parsley for garnish


Instructions

  1. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. In a large skillet or saucepan, lightly oil the pan and sear chicken over medium heat until browned. Remove and set aside.
  3. Add rice to the same pan and stir for 1 minute to toast lightly.
  4. Whisk together chicken broth, BBQ sauce, and honey. Pour mixture into the pan with rice.
  5. Stir in mixed vegetables, then place chicken on top.
  6. Bring to a gentle boil, cover, reduce heat, and simmer for 18โ€“22 minutes until rice is tender and chicken is cooked through.
  7. Let rest 5 minutes. Garnish with green onions or parsley and serve warm.

  • Use your favorite BBQ sauce for a smoky, spicy, or sweet flavor.
  • Chicken thighs will be extra juicy, but breasts work great too.
