Honey BBQ Chicken Rice is a sweet and savory one-pan meal made with tender chicken, fluffy rice, and a sticky honey BBQ sauce. This easy dinner is perfect for busy weeknights and is sure to be a family favorite.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ยฝ cup BBQ sauce
- ยผ cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ยฝ teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (fresh or frozen)
- Chopped green onions or parsley for garnish
Instructions
- Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
- In a large skillet or saucepan, lightly oil the pan and sear chicken over medium heat until browned. Remove and set aside.
- Add rice to the same pan and stir for 1 minute to toast lightly.
- Whisk together chicken broth, BBQ sauce, and honey. Pour mixture into the pan with rice.
- Stir in mixed vegetables, then place chicken on top.
- Bring to a gentle boil, cover, reduce heat, and simmer for 18โ22 minutes until rice is tender and chicken is cooked through.
- Let rest 5 minutes. Garnish with green onions or parsley and serve warm.

- Use your favorite BBQ sauce for a smoky, spicy, or sweet flavor.
- Chicken thighs will be extra juicy, but breasts work great too.
